Sautéed Meyer Lemon Scallops

¼ cup of BG’s Meyer Lemon olive oil

1lb. of fresh scallops

2 Tbs. of minced green onions

1 clove garlic

¼ tsp. pepper


In a bowl, combine the green onions, garlic and Meyer Lemon olive oil and pepper. Add scallops to the bowl and marinade 15 minutes. Place skillet on medium-high heat and allow skillet to get hot. Place scallops in skillet and allow them to sauté about 2 minutes on each side. Do not turn the scallops before 2 minutes to allow a nice glaze to form. Serve with rice, vegetables or over a bed of greens.
